Diabetic Pumpkin Cookies

The weather is turning cooler and pumpkins are readily available at local stores.  Enjoy the season with these healthy, diabetic-friendly pumpkin cookies.

Healthy & delicious diabetic pumpkin cookies

1 c. shortening
1 c. cooked pumpkin
1 egg
1 tsp. vanilla
2 c. flour
1/4 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 c. raisins
1/2 c. chopped nuts (optional)

Preheat oven to 350 degrees. 

Soak raisins hot water for 5 minutes, then drain. Cream the shortening with a blender.  Add pumpkin, egg and vanilla. Beat well. Mix dry ingredients and add to creamed mixture. Mix well. Add raisins and nuts. Drop on greased cookie sheet. Bake 350 degrees for 12 minutes.  Makes 48 cookies.
