Healthy Cookout

Besides improving overall well-being, the three big reasons to start/keep eating healthy now are:

  1. Reduces risk of cancer
  2. Reduces cholesterol and high blood pressure
  3. Reduces risk of cardiovascular disease and diabetes

We are always hearing in the media and being reminded that we need to eat healthy, but sometimes it can be so difficult due to the time it takes to prepare healthy meals or at special meals, such as summertime cookouts! With the Fourth of July almost here, here are some festive healthy easy recipe ideas that you can bring or make for your guests! Enjoy!

 

HEALTHY LAYER SALAD

  • Guacamole dip (1-2 containers depending on your preference)
  • 1 ½ cup of fat free plain Greek yogurt
  • 1 packet of taco seasonings
  • 2 cans of refried beans
  • 1 green onion-chop
  • 3 tomatoes-chop
  • 2 cans olives-slice
  • 1 package of cheddar cheese-shredded
  • Corn chips

DIRECTIONS:

  • Spread refried beans on a serving platter
  • Spread guacamole over refried beans
  • Mix taco seasoning and Greek yogurt together and then spread over guacamole
  • Sprinkle with chopped tomatoes, onions, olives and cheddar cheese
  • Refrigerate until serving with corn chips

 

One of the easiest foods for cookouts is watermelon! Serve chilled!

 

MAYO-LESS DEVILED EGGS

  • 6 eggs-hard boiled
  • ¼ cup of fat free plain Greek yogurt
  • 2 teaspoons of mustard
  • Garnish with pepper and paprika

DIRECTIONS:

  • Cut eggs lengthwise and remove yolk
  • Mash and combine yolks, yogurt, and mustard together in a bowl
  • Add small tablespoons back into the halved eggs
  • Garnish with pepper and paprika

 

GRILLED CORN-ON-THE-COB

  • Husked corn
  • Extra-virgin olive oil

DIRECTIONS:

  • Remove husks from corn
  • Use 1 teaspoon of extra virgin olive oil per cob to brush corn before placing it on grill
  • Rotate on grill until some kernels are light brown

 

CHICKEN KABOBS

  • 3 Chicken breasts
  • 2 Green bell peppers
  • 2 Red bell peppers
  • 2 Onions
  • 2 Potatoes
  • Garlic powder

DIRECTIONS:

  • Soak wooden skewers in water for about 10 minutes (time while you are cutting the chicken and vegetables)
  • Cut chicken into small cubes
  • Cut bell peppers, onions, and potatoes into cubes
  • Place one cube of chicken on the skewers and alternate vegetables and chicken on skewer as desired
  • While rotating skewer, sprinkle garlic powder over finished skewers
  • Wrap in aluminum foil and rotate on the grill until chicken is cooked

 

PATRIOTIC STRAWBERRIES:

  • 1 carton of strawberries
  • 1 bag of white chocolate chips
  • Blue sprinkles

DIRECTIONS:

  • Melt white chocolate
  • Lightly dip half of strawberry into white chocolate
  • Lightly sprinkle with blue sprinkles
  • Put in refrigerator for cooling until serving

 

KABOBSICLES

  • 1 pint of strawberries
  • 1 pint of blueberries
  • 3 bananas
  • (Optional: vanilla yogurt)

DIRECTIONS:

  • Cut strawberries in half and slice bananas
  • Alternate the order of fruit being put on wooden skewer
  • Place fruit-filled skewers into large freezer bag
  • Freeze for 3 hours-serve frozen
  • Or serve chilled with vanilla yogurt for dipping
